Okay, you caught me! It’s not Sunday, it’s Wednesday – but does anyone really know what day it is over holiday weekends? Even though my work-week will be short (Thursday and Friday) I still need a little routine and order in my life – so I treated today like a Sunday and got to work!
It’s cooking day, it’s cooking day!!! Is it just me or is this summer flying by? Somehow I blinked and the 4th of July is already come and gone – I hate when I do that. Life feels like it has been on turbo speed. I’m at that time in life where my friends are getting married and having babies and I’m just busy as a little bee celebrating all of life’s beautiful moments with them! I’ve had the past 5 days off for the 4th of July and it has been LUXURIOUS to say the least. Matt and I had no plans all weekend and it was perfect. We spent Saturday with his family at his Aunt & Uncle’s grilling out and watching fireworks, Sunday I went and visited my friend Kelsey and her new baby bundle Levi, Monday we went on a leisurely fishing adventure, and Tuesday my sister and her son came into town on their way to St. Louis and had a little sleepover. And today, Wednesday, it is cooking day!
Being able to spend a whole day cooking and getting ready for the (two day) week gives me so much peace and contentment. I always feel so flustered on weeks when I don’t get to spend my Sunday preparing for the work-week. Today is pretty much my Sunday. Sunday’s are Matt and I’s day to relax, but to also to get our affairs in order. We clean, do laundry, and take things slow. I like to cook and get all my meals ready for the week, cut up fresh veggies, and create recipes that I can use and share with all of you! I generally block Sunday’s off from any plans because it is truly my day to recharge.
On Sunday’s I like to put on Real Housewives re-runs or a Netflix documentary (quite the range, eh?), drink my coffee, and get to work. So far this morning I’ve sipped coffee, done two loads of laundry (with two more in queue), and watched What the Health on Netflix. Netflix has the best documentary library – they always suck me in. This one really made me think about the role of meat and meat products in my life and how it affects my body and health. As an animal lover, I’m always on the fence about meat anyway. In college, I was a successful vegetarian during my Junior year. It actually wasn’t hard at all on a college budget! I think being a vegan would be quite difficult though. No dairy, no eggs, nothing! But I’m always interested in trying new things. The biggest thing is that I would need to find savory breakfast recipes – I can’t do sweet smoothies and granola every day. However, this venture will have to wait for another day, I already went to the grocery and bought meat and dairy products, such is life!
Yesterday, I hit up my local Sprouts market and picked up a bunch of goodies to eat for the remainder of this week and next week. I primarily bought veggies anyway because after all of the traveling and celebrating I’ve done, I like to restart my body with whole fruits, grains, and veggies. I also picked up some organic turkey bacon and Fage Greek Yogurt. Here are some of the things I’m planning to cook up with all my goods!
Lunch & Dinners
- Garlicky Roasted Sweet Potatoes, Steamed Collard greens and Quinoa
- Mexican quinoa and black bean bowls
- Refried Bean and Green Chili Enchiladas
- Fresh Garden pasta with burst tomatoes, fresh basil, toasted pinenuts, and shaved parm
- Fresh summer salads
- Ezekiel Cinnamon Raisin Toast with Butter & Banana
- Greek Yogurt Parfaits with sliced Strawberries, Blueberries, Honey and Ground Flax
- Turkey Bacon and Avocado
- Blended zucchini, squash, and cauliflower chocolate breakfast smoothies
- Fresh cut veggies (celery, carrots, and broccoli) with Greek Yogurt dip
- Roasted garlic + lemon broccoli
- Kale, cucumber, green apple, lemon & celery juice
- Grapefruit & Sliced Strawberries
These recipes should get me through the remainder of this week, and through all of next week and weekend. The best part? I bought all of these goodies and ingredients for under $60. Perhaps I’ll do an entry on budget grocery shopping soon!
